"Biryani" is a set of rice-based foods made with spices, rice usually basmati. [the n.v.people add their own favourite items]
The spices and condiments used generally in biryani may include but are not limited to: ghee, cumin, cloves, cardamom, cinnamon, bay leaves, coriander, mint leaves, ginger, onions, and garlic.
In India when you say 'Biryani', people get enamored & they welcome this dish. Whenever one goes to Hotels in India, this item takes the 1st place among items because of its flavour. It is not a very big or difficult thing to cook this
item at home. There are different kinds of 'Biryani' பார்த்ததுமே... 'தொட்டுக்கறதுக்கு தயிர் பச்சடிகூடத் தேவையில்ல... ஒரு பிடி பிடிச்சிட வேண்டியதுதான்' என்று களத்தில் இறங்கி, கவளம் கவளமாக வெட்ட ஆரம்பித்துவிடுவீர்கள். Let us go first now...."How Tomato Biryani is prepared".
Items required :
(1) Basumati rice - one cup; (2) tomatoes- 4; (3) Garlic - 4 tiny pieces; (5) fresh green chillies - 4 nos. (6) cloves, cinnamon barks, cardamoms, kirambu, onion {each two numbers}, (7) cumin seeds and saffron power...each half a teaspoonful,(8) curry patha, cut coriander leaves...small quantity (9) oil and salt....required quantity.
How to do?
Soak the rice for sometime in water and then cook the rice and keep it separately...filtering away all water in it.
Grind in the mixer tomatoes & keep it separately; so also grind in mixer garlic and green chillies & keep it separately.
In the 'kaday' (frying pan) pour small quantity of oil and get it heated. After it has been heated, put into the hot pan (into the oil) cumin seeds, cardamom, cloves, kirambu, cinnamon barks & fry them to a level........add then add that grinded garlic and green chilly paste kept separately & fry well. Then add the cut onion pieces into it and fry....& also add that tomato grinded paste + needed salt + saffron powder a bit and altogether fry them till all the oil completely disappears.
Finally add the cooked rice over it and altoger fry it for a while. Lastly add that curry patha leaves and coriander leaves, allow it in the frying pan for a minute or two and take out the pan from the heat.
Then pour it in separate plates to consume! OK?
